Healthy Bean Medley

This is a high protein dish that is an ideal power fuel for anyone with carbohydrate sensitivity,
especially hypoglycemics and hyperglycemics. Plan on making a big batch and putting some away in
individual serving containers in the freezer. Important: all cans of beans are not created equal!
Check the labels and look for 0g or at most 2g sugar per serving. Bush's brand beans are generally
very low in sugar and excellent quality. This entire dish costs around $12 and makes about 12 servings.
Do the math... high nutrition and high taste for about a buck per serving! :-)

(2) 16 oz. Cans Bush's Pinto Beans
(2) 16 oz. Cans Bush's Great Northern Beans
(2) 16 oz. Cans Bush's Butter Beans
(1) 10 oz. Can Ro-Tel Regular Diced Tomatoes & Chile Peppers
(1) 28 oz. Can Del Monte Diced Tomatoes with Basil, Garlic & Oregano
1 Whole Fresh Roasted Chicken (from a deli)
1 Container Firm Tofu

Separate the chicken meat from the bones and skin, break into bite size pieces, and place in a large pot.
Add the two cans of diced tomatoes and cook for about 5 minutes. Strain and cut the tofu into 1/2" cubes
and add to the pot. Then add all the beans with liquid (don't drain). Stir the mixture occasionally over
medium heat until everything is bubbling, about 15 minutes. Add some fresh ground pepper to taste.
